Ackee & Saltfish With Fried Dumplings

Ingredients:

  • 1 can (19 ounces) canned ackee, drained and rinsed
  • 1 lb smoked sausage, sliced into rounds
  • 2 tablespoons cooking oil
  • 1 onion, finely chopped
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tomatoes, diced
  • 1/4 cup scallions, chopped
  • 1 Scotch bonnet pepper, seeded and minced (adjust to your spice preference)
  • 1/4 cup C & X Brand Sweet & Hot Sauce
  • Salt and black pepper to taste
  • Fresh thyme sprigs
  • 1 lime, juiced
  • 2 tablespoons fresh cilantro or parsley, chopped (for garnish)

Fried Dumplings:

  1. In a mixing bowl, combine the flour, salt, sugar, and baking powder.
  2. Cut in the butter or margarine until the mixture resembles coarse crumbs.
  3. Gradually add water and knead until a soft, smooth dough forms. You may not need all the water, so add it gradually.
  4. Divide the dough into small portions and roll each portion into a ball.
  5. Heat cooking oil in a frying pan over medium heat.
  6. Flatten each dough ball into a small disk and fry in the hot oil until they are golden brown and cooked through, about 2-3 minutes per side. Drain on paper towels and keep warm.

Ackee and Sausage:

  1. In a large skillet, heat the cooking oil over medium heat.
  2. Add the sliced sausage rounds and sauté until they are nicely browned on both sides. Remove the sausage from the skillet and set it aside.
  3. In the same skillet, add the chopped onions, bell pepper, and minced garlic. Sauté until the onions become translucent.
  4. Add the diced tomatoes, scallions, Scotch bonnet pepper, and fresh thyme sprigs. Cook for a few minutes until the tomatoes soften.
  5. Return the cooked sausage to the skillet and stir to combine with the vegetables.
  6. Gently fold in the canned ackee, taking care not to break it apart. Cook for another 5-7 minutes, stirring occasionally.
  7. Pour in the C & X Brand Sweet & Hot Sauce, lime juice, and season with salt and black pepper to taste. Stir well and let it simmer for a few more minutes until the flavors meld together.
  8. Serve the Ackee and Sausage with Fried Dumplings, garnished with chopped cilantro or parsley.
